Can you show us a picture in the timeline between the first and the second? Where is the burning wood? Besides the pan and the cover (it's made of clay, right?) or somehow upon?

It is traditional way of preparing food. Originaly it was clay, but now more steel as it is easier to handle. The same way we prepare lamb or veal, pork, rooster... It is very simple and basic but very tasty as it gets that special taste from fire/wood/smoke. Basically, you season the meat and potatoes (onion and carrots can be used also; no vegetables that have too much water like courgettes or aubergines), you put them in a pan (with a spoon of pork grease), potatoes up first; cover with that cast iron bell and then you put ember arround it and on top (one cast iron circle is used to keep it on top). Uncover in 45min, turn all on other side, potatoes are now grilled and are going under the meat and then the same procedure for the next 20mins. On this way, you get a really nice flavour and texture is between baked and cooked, also potatoes soak up all the flavour ![]()

As I mentioned, I don't eat animals. Do you think, peppers, onions, teasel or cabbage will work?
Yes, like a platform (cc4-5cm high) that is places around the cover (in the middle). ALso a great way to prepare bigger pieces of fish as it is prepared for +10 people. Diameter of pan is between 40-65cm, than iron bell on top with the ring and you cover all with ember on top and the side.
It is quite easy and definetely a must have if you ever visit Dalmatia (it is oredered a day in advance in restaiurants that offer real homemade food). It was also used to make bread before ovens (my grandmother used to prepare it)
